Abstract: The paper explores the food industry, provides analysis of catering market and classification of catering enterprises, characterizes factors that contri­bute to the development and improvement of services quality in this sphere. The authors stress the importance of introduction of new forms of servicing which take into account individual peculiarities and preferences of consumers.
